We were having some friends over for the holiday for some fun, food and swimming. Since they were going to be over for lunch and dinner, I put this Fiesta Crock Pot Roast on late the night before and it was ready for us to devour at lunch! Everyone, from the adults to the kiddos, absolutely loved this yummy roast. Together we came up with all kinds of ways that this would be delicious like…on tortillas, nachos, taco salad, rice or buns. All of those ideas were thought of in about a minute, amidst a whole lot of “Oh my! This is so good!”. I hope you enjoy it as much we all do!

How to Make Fiesta Roast in a Crock Pot

Place your roast in a 6-quart crock pot. Add in your remaining ingredients. Cover and cook on low for 10-12 hours. Shred with two forks and serve whatever way suits your fancy. Told ya it was easy! 😉

  • 2.5 lb beef roast
  • 20 oz tomatoes with chiles (2 - 10 oz cans)
  • 1 oz pkg taco seasoning

Instructions

  • Place your roast in a 6-quart crock pot.

  • Add in your remaining ingredients.

  • Cover and cook on low for 10-12 hours.

  • Shred with two forks and serve whatever way suits your fancy.

    I made the Fiesta appt roast. So easy! I cooked it 8 hours and it fell apart beautifully. I had checked it at 6 hours to see how my crockpot was doing and the roast was still tough.
    I prepared it as per the recipe but didn’t find the meat had taken on much of the flavor from the taco seasoning or the tomatoes. But it was tasty and shared it with the neighbors who loved it too!

      I don’t know if the extra 2 hours I cooked it let more of the flavor cook in or if it was just one of those things. I’m sorry to hear it wasn’t as flavorful as ours! I’m glad your neighbors liked it!

    I love every recipe I’ve tried so far. I have a very touchy printer so getting the recipes printed is sometimes a pain. I watch a lot of your videos and have never heard you mention a cookbook. If there is one where can I get one.

    Question on your beef roast recipe…Can I add veggies such as potatoes, carrots and onions to the crock pot to cook along with the beef?

    If so will it change the cooking time?

      Hi Lowell!

      Absolutely! Make this recipe your own! I have not tried it, so I can’t say what it would or wouldn’t do to the cooking time. When I’m trying a new recipe, I always watch it closely the first time I make it to make sure I get the cooking time right. If you want your veggies to cook the entire time your roast is, use a firmer potato like a russet. They are better for the longer cooking times. Let me know if you try it!

      We did thanks. My husband rebuilt part of our deck in 90+ degrees…don’t know how he did it in this humidity! He didn’t mash any fingers like poor Mikey did…bless his heart!
